WHIPPED CAULIFLOWER
Thanksgiving will be here before you know it and this year Royal United Mortgage wants to help you create a healthy Thanksgiving meal. Our Wellness Committee started collecting recipes from our employees for our first ever employee cookbook. Over the next few weeks, we want to share some of our favorites with you! This week’s recipe, of Whipped Cauliflower, is from Teresa Lindsey.
WHIPPED CAULIFLOWER
General Description: WHIPPED CAULIFLOWER (serves 8)
Time to Prepare: 15-20 minutes
Ingredients:
- 2 bags of frozen riced cauliflower
- Garlic (1-2 cloves) – I used already minced garlic
- 3-4 TBS Butter
- 2 TBS Cream Cheese (I like a little bit more personally)
- ½ C Grated parmesan cheese
- Heavy Cream (or half/half, almond milk)
- Salt / Pepper to taste
- Shredded cheese & Bacon to garnish
Directions:
Cook cauliflower as directed on the package
Combine all ingredients into food processor or food ninja. Puree until light and fluffy (add cream as needed to thin out if needed)
Top with Cheese and bacon (if desired)
